Hi,

Can I claim previous years 'claims that were not paid by my medical aid' on this years tax return or what is the correct process?

I forgot to include those on previous years returns.

You would have to go back to the old returns and amend them with the amounts per the relevant year. You are only able to deduct the expense in the tax year it was incurred and paid.
