Tax rules for foreign income for SARS?

For my tax return would the invoices I raised be sufficient to prove the foreign income earned?

Yes, that would be sufficient. If you receive the payment in RANDS then you would use that amount as your declarable income. If however you receive income in foreign currency then please make use of the SARS Exchange Rates to work out what needs to be declared.

How would SARS know that I was out of the country for over 183 days? Do I have to prove this?

If income is exempt only after 183 days and a tax assessment comes in between 183 days, how do I deal with this?

I have a 6 month contract outside of SA starting this Jan 2016. I'm planning my best toto stay out of the country for 183 days.

If you can stay out then your income would be exempt. When you complete a tax return you would need to either put this under Amounts Not Considered Taxable or if you are working for an SA company then they would need to put the relevant codes on your IRP5.
