I was on maternity leave from the 21st July to 1st December. During this time I did not earn a salary and claimed from UIF. How does my tax returns then get calculated?

Your employer will issue you with an IRP5 which will detail your salary earned for the year. It won't include earnings for the time you were on maternity leave while you were claiming UIF.
